Pumpkin Bars

Ingredients
- For Frosting:
- 4 eggs
- 2 cups Sugar
- 2 cups Pumpkin
- 3/4 cups melted butter
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- Pumpkin spice to taste
- 1 cup walnuts
- 16 oz cream cheese, room temperature
- 1 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1 cup heavy cream, cold. Higher the fat content, the better.
Preparation
Step 1
Preheat oven to 325 degrees.
Cream eggs and sugar. Add remaining ingredients in the order listed. Beat until well mixed. Pour into greased 11 x 17 jelly roll pan. Bake approximately 25 minutes.
Cool and frost.
While bars are cooling, make frosting. Beat the cheese, sugar and vanilla until smooth and fluffy. In a separate bowl, beat the heavy cream to nearly stiff peaks, then add the whipped cream into the cheese mixture and quickly and briefly beat to combine. Do not over beat.
