Peach Vinaigrette

Ingredients

  • 2 yellow peaches, peeled and pitted
  • 3 tablespoons olive oil
  • 2 tablespoons vinegar
  • 1/2 teaspoon salt

Preparation

Step 1

Cut the peaches into chunks. Put peaches, vinegar and salt in a food process. Process until smooth. Drizzle in the olive oil.

Place spinach on a plate. Add sliced peaches and pecans. Drizzle on vinaigrette.
