Ingredients

  • 1 Bunch Swiss Chard

  • 6 Lg. Eggs

  • 1 C. Milk

  • 2 tsp. Dijon Mustard

  • 1 1/4 tsp. Salt

  • 3/4 tsp. Pepper

  • 3 C. Cubed Ciabatta Bread

  • 1 1/2 C. Grated Parm

  • 1 8 oz. Pkg. Sliced Mushrooms

  • 1 Red Bell Pepper, Chopped

  • 1 Sm Onion, Chopped

  • 1 tsp. Minced Garlic

  • 2 TBLS. Olive Oil

Directions

1. Pre-heat oven to 350 2. Clean and chop swiss chard. 3. Whisk eggs and next four ingredients in a large bowl. 4. Stir in bread, and half cheese. 5. Saute mushrooms and next three ingredients in oil. Stir in swiss chard. 6. Fold vegetable mixture into egg mixture. 7. Pour into greased 11x7 inch baking dish. Sprinkle with remaining cheese. 8. Bake at 350 for 35-40 min or until center is set. Let stand 5 min.
