Ingredients

    medium eggs

    Tablespoons coconut oil

    medium onion, chopped

  • 2

    medium carrots, chopped

    cup edamame

  • 1

    teaspoon fish sauce

  • 1

    Tablespoon soy sauce

  • 0.5

    teaspoon ginger

  • 1.33

    cups brown rice, preferably prepared the night before

Directions

Scramble the eggs and then set aside. Heat coconut oil in a medium skillet over medium-high heat. Add onions and carrots and cook until onions are translucent, about 5 minutes. Add edamame, fish sauce, soy sauce, ginger, and brown rice. Cook for 5 more minutes. Add eggs and cook for 1-2 more minutes. Remove from heat. Serve. Freezing Directions: Allow to cool. Place in a gallon freezer bag, label, and freeze. TO SERVE: Thaw. Heat in microwave or on stovetop, adding a bit of water, as needed.
