Rice Pudding with Strawberries

Ingredients

  • 2 1/4 cups whole milk
  • 1/4 cup arborio rice
  • 1 cinnamon stick
  • 6 tbs. sugar
  • Pinch salt
  • 1 1/2 tbs. butter
  • 1/2 lb strawberries, trimed and halved

Preparation

Step 1

Bring milk and 1 cup water to a boil over medium high heat. Stir in rice, cinnamon stick, 5 tbs. sugar and salt. Reduce heat and simmer gently, stirring often, until rice is creamy, about 45 minutes. Remove from heat and discard cinnamon stick.

While rice is cooking, melt butter in a skillet over medium heat. Stir in berries and remaining tablespoon sugar. Cook, stirring frequently, until berries are tender and glossy, about 2 minutes. Remove from heat.

Transfer rice to a bowl to cool to room temperature, (non metalic bowl). Spoon pudding into cups and top with remaining strawberries.
