MEAT LOAF WITH FRESH TOMATO SAUCE & SWEET POTATO

Lovely meat loaf stuffed with sweet potato and garnished with a Fresh Tomato Sauce.

Ingredients

  • Meat Loaf:
  • 1/2 pound each ground beef, pork and veal
  • 1 onion, chopped
  • 1 egg beaten
  • 1/2 cup dry bread crumbs
  • 1/4 teaspoon salt & pepper
  • 1 cup mashed cooked sweet potato
  • 2 tablespoons chopped green onion
  • 2 tablespoons maple or corn syrup
  • Fresh Tomato Sauce:
  • 3 tomatoes, peeled seeded and chopped
  • 2 green onions, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon salt & pepper

Step 1

Meat Loaf: Mix together beef, pork, veal, onion, egg, bread crumbs, salt and pepper to taste. Between two sheets of waxed paper, roll out meat mixture into rectangle about 12 x 8 inches (30 x 20 cm). Remove top sheet. Spread sweet potato over meat mixture, leaving 2-inch (5cm) border on short sides; sprinkle with green onion. Starting from short end, roll up, using paper to lift. Pinch ends together to seal in filling. Place seam side down, on lightly greased baking pan.
Bake in 350 F oven for 45 minutes. Drain off excess fat: drizzle loaf with syrup. Return to oven and bake for 15 minutes or until golden brown and juices run clear. Let stand for 10 minutes before slicing. Serve with Fresh Tomato Sauce.

Fresh Tomato Sauce: Mix together tomatoes, onions, oil, vinegar and sugar. Season with salt and pepper to taste. Serve cold. Makes about 2 1/2 cups.
