Ingredients

  • 1 dozen tortillas, cut fine
  • 1 chicken, cooked and deboned
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup chicken broth from chicken
  • 1 can Rotel diced tomatoes and green Chilies
  • Salt & pepper to taste
  • 1 t. garlic powder
  • 1 ½ t. chili powder
  • 1 t. green Panola sauce
  • 1 large onion, finely chopped
  • 1 ½ cups grated Cheddar cheese
  • 1 ½ cups grated Monterey Jack cheese

Step 1

For sauce, combine soups, broth, tomatoes and seasonings. In a 2 qt greased casserole, layer ½ the tortillas, ½ the chicken, ½ the sauce and ½ the onion & cheese. Repeat the layers with cheese on top. Bake 350 for 1 hour. Serves 6.
