  • 1 ½ cup 2% milk
  • 1 ½ cup heavy whipping cream
  • ½ cup parmesan cheese (grated)
  • ½ cup Romano cheese (grated)
  • 6 egg yokes
  • Salt and pepper to taste



Step 1

Heat milk and cream in heavy bottom pan until it simmers. Turn off heat. Whip in cheese and remove from heat. Place egg yolks in separate bowl and slowly whip in portion of hot milk and cream mixture. Add yolk back into pan. Heat sauce on very low heat and continually stir until simmering. Season with salt and pepper to taste.
