Ingredients
- 4 tomato, green
- 1/2 cup cracker crumbs, finely ground
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup olive oil
Preparation
Step 1
Slice tomatoes to a thickness of ¾-inch.
Combine cracker crumbs, salt, and pepper-mix well.
1. Add tomato slices and coat evenly.
2. Heat oil to 375º in a large skillet.
3. Add tomatoes and cook until golden on both sides.
4. Drain on a cooling rack and blot with paper towels.
Serve hot or warm.
