  • 2 cups cubed cooked chicken
  • 1 cup chopped celery
  • 1 cup mayo
  • 1/2 tsp curry powder
  • 1 can (20 oz) chunk pineapple, drained
  • 1 can mandarin oranges, drained
  • halved grapes
  • 3/4 cup cashew halves


Servings 4


Step 1

Place chicken and celery in a large bowl. Combine mayo and curry powder. Add to chicken mixture and mix well. Cover and chill for at least 30 min. Before serving, add the pineapple, oranges and bananas if desired. Toss gently and serve on salad greens. Sprinkle with cashews.
