Blackened Shrimp Po'Boy

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1 Tbsp. EVOO
  • 2 teas. creole seasoning
  • Salt
  • 3 Tbsp. mayonnaise
  • 1 Tbsp. dijon mustard
  • 2 baguettes - halved and excess bread dug out
  • 1/2 head romained lettuce, shredded
  • 1 yellow bell pepper, sliced
  • 2 scallions, thinly sliced

Preparation

Step 1

Preheat grill or grill pan to medium-high heat.
In a bowl, combine shrimp, EVOO and creole seasoning. In a small bowl, combine the mayo, mustard, 1 teas. water, stir until smooth.

Lay the baguettes open on plates. Layer with the lettuce, pepper, and scallions.

Add the seasoned shrimp to the grill, cover and cook for 2 minutes. Flip and cook, covered, until just opague throughout, 1-2 minutes more. Arrange shrimp on the baguettes and drizzle with mayo-mustard sauce.
