Monte Cristo Sandwich
- 8 slices white sandwich bread
- 4 slices Swiss cheese
- 4 slices cooked ham
- 1 large whole chicken breast, cooked, deboned, skinned, and thinly sliced
- ¼ tsp. Ground nutmeg
- Pinch salt
- 1 tbs. butter or margarine, at room temperature
- 2 eggs
- ½ cup milk
Cover each of 4 slices bread with 1 slice cheese and 1 slice ham. Arrange chicken slices evenly over the ham; sprinkle with nutmeg and salt. Cover each sandwich with remaining bread slice; cut each sandwich in half diagonally.
Brush griddle with butter, and heat to 350 degrees.
Beat eggs and milk in a shallow pan. Dip sandwich halves into the egg mixture, coating both sides. Cook sandwiches on griddle until golden and hot throughout, 3- 5 minutes on each side.
