Ingredients
- 6 chicken breasts, cooked & cubed
- 1/4 cup butter
- 1/2 cup chopped onion
- 1 medium green pepper, chopped
- 1/4 cup all purpose flour
- 2 cups milk
- 2 teaspoons ground cumin
- 1 1/2 cup chicken broth
- 1 cup sour cream
- 2 cans chopped green chilies, drained
- 1/4 cup jalapeno peppers, chopped
- 2 teaspoons seasoned salt
- 2 cans black olives, sliced (5oz)
- 8 tortillas (corn of flour) torn into bite sized pieces
- 1 # cheddar, shredded
- 8 oz mont jack, shredded
Preparation
Step 1
Preheat oven to 375 degrees. Saute butter, onion, and green pepper until tender. Add flour; cook and stir 1 minute. Add milk, cumin, chicken broth, and sour cream; cook till thick, stirring constantly. Add green chilies, jalapeno peppers, seasoned salt, and black olives. In a 3 quart casserole, layer chicken, tortillas, sauce, and cheese; repeat - end with cheese layer on top. Cook 1 hour at 375 degrees.
