Holiday Biscotti

Ingredients

  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 3/4 cup sugar
  • 1 stick unsalted butter
  • 1tsp lemon zest
  • 1/4 tsp salt
  • 2 eggs
  • 3/4 cup large chunk pistachios
  • 2/3 cup diced cranberries
  • 12 oz chopped white chocolate
  • red and green sugar crystals

Preparation

Step 1

line baking sheet with parchment paper

set over to 350 degrees
whisk flour and baking powder in a bowl
in the mixer, beat sugar butter, lemon zest and salt in a large bowl. Beat in eggs one at a time. add flour mixture.
Stir in nuts and cranberries. form dough into a 13 x 3 log . Bake about 40 minutes, cool for 30 minutes and cut into strips and bake for another 15 minutes.

Dip the cooled biscotti into melted chocolate and put on garnish.
