  • 1/2 cup butter
  • 1 medium onion
  • 1 medium green pepper
  • 1 can whole kernel corn
  • 1 can cream corn
  • 1 small box Jiffy corn bread mix
  • 3 eggs
  • 1/2 pint (1 cup) sour cream
  • 1 cup cheddar cheese

Step 1

Saute' 1/2 cup butter with onion and chopped green pepper until crisp tender.
Mix whole corn (with juice)and cream corn with 1 Jiffy corn bread mix, 3 eggs, and add saute'd onion and green pepper. Put all in casserole dish (buttered). Top all with spoonfuls of the sour cream. Sprinkle all with 1 cup cheddar cheese. Bake for one hour in a 350 degree oven until center is set.
