Ingredients

  • 2 Tbs. parsley, chopped

  • 2 Tbs. Rosemary, chopped

  • 2 Tbs. thyme, chopped

  • 4 garlic cloves, mashed

  • 2 tsp. fresh cracked black pepper

  • 2 Tbs. Dijon mustard

  • 1/2 cup seasoned bread crumbs

  • 1/4 cup Worcestershire sauce

  • 1/2 cup water

  • 1 shallot minced

  • 1/2 cup olive oil

  • 1 3-lb. beef tenderloin, trimmed of fat

  • salt and pepper

Directions

Pre-heat oven to 525º degrees. Place baking rack on third level from bottom. In a medium-sized mixing bowl, combine herbs. Add remaining ingredients, stirring to make a thick paste. Spread evenly over tenderloin. Tuck thinner end of tenderloin underneath so that it will cook evenly. Salt and pepper to taste. Place tenderloin on a rack inside of oven roasting pan. Place in oven and reduce temperature to 375º. Bake for 45 minutes or until the thermometer reads 150º for medium or so. Let sit for 10 to 15 minutes before carving. Slice thinly against the grain.
