Ingredients
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 cups peeled and grated zucchini or carrots
- 1 t vanilla
- 1/4 t black walnut flavoring
- 3 cups flour
- 1 T cinnamon
- 1 t salt
- 1 t baking soda
- 1 1/4 t baking powder
Preparation
Step 1
Combine ingredients. Sprinkle tops with cinnamon and sugar. Bake 350° for 20 minutes for muffins.
Yields: 24 muffins or 2 loaves
