Muffins: Grandma's Special Breakfast Muffins (Zucchini)

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups peeled and grated zucchini or carrots
  • 1 t vanilla
  • 1/4 t black walnut flavoring
  • 3 cups flour
  • 1 T cinnamon
  • 1 t salt
  • 1 t baking soda
  • 1 1/4 t baking powder

Preparation

Step 1

Combine ingredients. Sprinkle tops with cinnamon and sugar. Bake 350° for 20 minutes for muffins.

Yields: 24 muffins or 2 loaves
