Candied Sweet Potatoes

Ingredients

  • 4 pounds (about 8 medium) sweet potatoes, peeled and sliced into 1 1/2-inch-thick chunks
  • 1/2 cup packed dark brown sugar
  • 4 Tablespoons margarine or butter
  • 3/4 teaspoons salt
  • 1 1/2 teaspoons vanilla extract
  • Coarsely ground black pepper
  • 1/2 cup Slivered almonds (optional)

Preparation

Step 1

1. Preheat oven to 425ºF. Grease a 9” x 13” glass or ceramic baking dish.
2. Place potatoes in prepared baking dish; cover with foil and bake 20 minutes.
3. Meanwhile, in a 1-quart saucepan, combine brown sugar, butter and salt. Cook over medium heat, stirring frequently, until mixture comes to a simmer. Simmer 1 minute. Remove saucepan from heat and stir in vanilla. Keep warm.
4. Remove baking dish from oven. Spoon brown-sugar mixture evenly over potatoes and stir to coat. Bake, uncovered, 40 to 45 minutes longer, or until potatoes are tender and glazed, basting with juices in pan halfway through baking. Remove baking dish from oven and let potatoes stand 10 minutes before serving. Sprinkle with pepper and, if you like, top with slivered almonds.
