Corn and Green Chili Chowder

  • 3 slices of bacon, chopped

  • 1 large onion, minced

  • 3 cups fresh corn kernels, scraped from the cob or frozen

  • 3 cups whole milk

  • 1 lb baking potatoes, peeled and diced

  • 1 teaspoon salt

  • ½ cup of whipping cream

  • 1 cup roasted, peeled and chopped chilies

  • 2 tablespoons fresh chives, minced


Fry the bacon in a large saucepan over medium heat til brown and crisp. Remove the bacon. Put onions in drippings, cook til soft and translucent. Puree one cup corn and one cup milk in blender. Pour the mixure into the pan. Add remaining milk and corn along with potatoes and one teaspoon of salt. Reduce heat to medium low and cook 10-15 minutes. Stir in the cream and green chilis. Add salt and pepper to taste. I luh you :)
