Fresh Corn and T.omato Salad

Ingredients

  • 4 ears corn
  • 2 large tomatoes, diced or 1 cup grape tomatoes, halved
  • 1 small sweet onion, chopped
  • 1 (.75 ounce) package basil, chopped (About 1/3 cup chopped)
  • 2 T white vinegar
  • 2 T olive oil
  • 1/4 t sea salt
  • 1/8 t black pepper

Preparation

Step 1

In a large pot, boil corn in water for about 7 minutes. Remove corn and plunge into cold water. Cut corn off cob and set aside to cool completely.

In a large bowl, combine cooled corn, tomatoes, onion and basil. Toss with vinegar and olive oil. Season with sea salt and pepper. Serve chilled or at room termperature.
