Tori's Penne with Squash and Sausage

Ingredients

  • 1 lb penne
  • 2 TBSP EVOO
  • 8 oz package pork sausage
  • 1 tsp chopped rosemary plus extra for garnish
  • 1 leek sliced thin
  • 10 oz winter squash peeled, seeded, diced
  • salt and pepper
  • 1/2 cup dry white wine

Preparation

Step 1

cook pasta

in a skillet over medium heat, warm EVOO. Remove sausage from casings. Crumble sausage and add to skillet. Add chopped rosemary cook stirring occasionally until sausage starts to brown. add leeks and cook until soft. Add squash to skillet and season with salt and pepper. Deglaze with wine and cook until it evaporates. Cover ans stir occasionally until squash is tender. Add drained pasta to skillet and toss well to a serving bowl . Add garnish and serve.
