Swedish Butter Lace Cookies

Ingredients

  • 1 ¼ c Margarine (or Butter ½ ½)
  • 1 c Sugar
  • 1 ¼ t Vanilla
  • 1 c Potato Flour
  • 1 c. Tapioca Starch (fine Ground)

Preparation

Step 1

Cream Margarine, add sugar and cream again. Beat in Vanilla, sift flour and add to creamed mixture, mix fully chill. Drop by small spoonfuls onto cookie sheet; cook 7-8 minutes at 375 degrees. Cool cookies on cookie sheet until they don’t squish, then transfer to cooling rack and devour. May “shape” while still soft and warm.
