Eclair Ring

Ingredients
- ECLAIR RING ingredients:
- 1 cup water
- 1 stick margarine
- 1 cup flour
- 4 eggs
- FILLING ingredients:
- 2 pkgs. instant vanilla pudding
- 3 cups milk
- 2 cups Cool Whip
- CHOCOLATE SAUCE ingredients:
- 1 TBSP. butter
- 1 1/2 TBSP. milk
- 1 square unsweetened chocolate
- 3/4 cups confectioners sugar

Preparation
Step 1
ELAIR RING:
Bring to a boil:
1 cup water
1 stick margarine
Remove from heat ad stir in 1 cup floor (stir ntil dough leaves side of pan - about 1 minute)
Place in mixer bowl and mix in 4 eggs (ONE AT A TIME until smooth)
Grease and floor a cookie sheet
Spoon dough onto cookie sheet by the spoonful, forming a ring (DO NOT SMOOTH OUT)
Bake at 400 for 40 minutes.
Turn oven off and leave ring in over for an additional 15 minutes
Cool completely and slice in half.
FILLING:
Mix milk and pudding.
Let set and then mix in 2 cups Cool Whip
Spoon filing into bottom half of ring and put top of ring on.
CHOCOLATE SAUCE
Over medium heat stirthe following until you get a glaze consistancy and pour over ring
Refrigerate 1 hour before serving
1 TBSP. Butter
1 1/2 TBSP. milk
1 saure unsweetened chocolate
3/4 cup confectioners sugar
