  • 1 cup flour

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup milk

  • 5 eggs

  • 1TBSP butter

  • 1 can fruit pie filling

  • optional: sour cream


Preheat oven to 425 degrees. Combine flour, soda and salt. Beat in milk. Continue beating for 2 minutes, adding eggs one at a time. Batter will be very thin. Meantime, melt butter in 10" cast iron skillet. Spread butter on bottom of pan and pour in batter. Bake 15 minutes at 425 degrees, reduce heat to 350 degrees and bake 5 more minutes. Remove from oven, let sit for 2 minutes until deflated. Spread pie filling of your choice on top, may garnish with sour cream if desired. Cut into wedges and serve.
