Ingredients

  • 3 cake contains 3 ingredients: egg, sugar, and flour. Beat yolks and sugar, add the flour and the whisked egg whites.
  • •Roulade is a sponge cake baked in a baking sheet pan, then rolled up in a towel while still warm.
  • •Genoise cake-eggs are beaten whole and combined with sugar over a water bath. This cake is more tender but less sweet than a regular sponge cake. Care must be taken so that the addition of flour, and clarified butter doesn’t deflate the batter
