Ginger Pork Pot Stickers

Ingredients

  • Sauce:
  • 1/2 pound ground pork
  • 1/2 cup cilantro leaves
  • 6 Tbsp. pine nuts
  • 1 inch ginger, peeled and sliced
  • 2 cloves garlic
  • 2 tsp. soy sauce
  • 1 tsp. sugar
  • 1 tsp cornstarch
  • 1 Tbsp. orange zest
  • 1/2 tsp. salt
  • 28 gyoza wrappers
  • 1 egg, beaten
  • 2 Tbsp. canola oil
  • 1/2 cup red wine vinegar
  • 1/2 cup sugar
  • 2 Tbsp. finely shredded carrot
  • 1 Tbsp. red pepper flakes
  • 1/2 tsp. salt

Step 1

Place ground pork in large bowl. Put cilantro, 4 Tbsp. pine nuts, ginger and garlic in food processor and mince. Add soy sauce, sugar and 1 teaspoon cornstarch; process until smooth. Pour mixture over pork. Mix in orange zest, salt and remaining pine nuts.

Dust baking sheet with cornstarch. Arrange several gyoza wrappers on work surface. Place one tablespoon of pork mixture in center of each wrapper. Brush half of the edge with egg. Bring edges together to form a half moon, press to seal. Place pot sticker on baking sheet, and cover loosely with plastic while assembling other potstickers.

To make sauce, bring all ingredients to boil. Reduce heat, and simmer one minute, stirring. Cool.

To cook potstickers: heat one tablespoon of oil over medium-high heat in skillet. Drop potstickers into pan, and cook until bottoms are browned, 3 minutes. Pour in 1/2 cup water to steam. Cover, and cook 8 minutes over medium heat.
