Ingredients

  • 1 medium head cauliflower
  • 3 medium carrots, sliced on the diagonal 1/2 inch
  • pinch of salt
  • 2 Tbsp olive oil
  • 3 Tbsp apple cider vinegar
  • 1 tsp sugar
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp red pepper flakes

Preparation

Step 1

Heat oven to 450 degrees. Toss cauliflower, carrots, salt and one tablespoon of olive oil. Roast vegetables for 18-20 minutes. Whisk together vinegar, sugar, oregano, thyme, pepper, and remaining 1 tablespoon olive oil and toss on roasted vegetables. Cool to room temperature. Serve with turkey burgers.
