  • Small pumpkins for each person
  • 1/2 c. butter
  • 1 c. brown sugar
  • 4 TBSP cinnamon

Step 1

Prepare your beef stew.

Cut the top off and hollow out each pumpkin. Throw out the seeds and strings - do not scrape out the meat of the pumpkin. Preheat the oven to 375 degrees.

Melt butter and combine with brown sugar and cinnamon. Pour this mixture inside of each pumpkin to coat it.

Put lid on pumpkin and place each pumpkin in a greased roasting pan with about 1 inch of water for 45 minutes at 375 degrees.

Take pumpkins out of oven and keep in the baking dish. Remove tops and place a portion of beef stew in each pumpkin. Bake for another 15 minutes. Remove from water bath and let sit for 5 minutes.

Guests can scrape the pumpkin meat from the inside of the pumpkin while eating the beef stew.
