  • 5 eggs

  • 1.5 oranges, zested

  • 1.25 cups sugar

  • 2 cups olive oil

  • 2 cups cake flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1 pint blueberries or raspberries (garnish)


Preheat oven to 325. Place eggs, zest, and sugar in a mixer. Whisk on medium 1 minute, until evenly mixed. Reduce speed to low and add oil in slow steady stream. In a mixing bowl, stir together dry ingredients, then add to egg mix in 3 batches, mixing until incorporated. Spray mini bundt pans with veg oil spray, fill with batter until almost full. Bake for 25 minutes. Serve with berries and whipped cream.
