Mexi-BBQ Meatloaf

This is a great recipe to "spice up" the regular meatloaf recipe and it is the only meatloaf recipe that my girls enjoy!

Ingredients

  • 1 1/2 lbs. lean Ground Beef
  • 1 cup Tortilla Chips, crushed into small pieces
  • 1/4 cup onion, finely chopped
  • 1/2 tsp chili powder
  • 1/2 tsp garlic salt
  • 2 – 2 1/2 tsp Worcestershire Sauce
  • 3/4 cup Cookies BBQ Sauce plus extra (for the top of the Meatloaf)
  • 1 cup corn, frozen
  • Nonstick Cooking Spray

Preparation

Step 1

Preheat the oven to 450 degrees Fahrenheit. Spray nonstick cooking spray onto the bottom and sides of a glass bread pan. In a medium bowl, combine all the ingredients and mix thoroughly. Place the mixture into the bread pan and press down lightly to even the top. Add the extra Cookies BBQ Sauce to the top to coat the meatloaf. Cover the pan with foil to seal in the heat. Bake the meatloaf in the oven for 40 minutes. Remove the foil cover and bake at 400 degrees Fahrenheit for an additional 30 minutes. Allow the meatloaf to cool for 5-10 minutes and serve hot.
