Peppered Pork and Eggplant

Ingredients
- 4 to 6 pork chops
- ½ tsp. dried basil
- ½ dried thyme
- 1 tsp. ground black pepper
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 medium eggplant, cubed
- 2 (14 ½ oz.) cans Italian-style stewed tomatoes

Preparation
Step 1
Put pork in slow cooker and sprinkle basil, thyme and black pepper all over. Add onion, bell pepper, eggplant and stewed tomatoes.
Cook on Low for 6 to 8 hours. Serve over linguine.
