Ingredients

  • 4 to 6 pork chops

  • ½ tsp. dried basil

  • ½ dried thyme

  • 1 tsp. ground black pepper

  • 1 large onion, sliced

  • 1 green bell pepper, sliced

  • 1 medium eggplant, cubed

  • 2 (14 ½ oz.) cans Italian-style stewed tomatoes

Directions

Put pork in slow cooker and sprinkle basil, thyme and black pepper all over. Add onion, bell pepper, eggplant and stewed tomatoes. Cook on Low for 6 to 8 hours. Serve over linguine.
