  • 3 tbsp EVOO
  • 3/4 cup onion, chopped
  • 1 lb ground beef
  • 1 package taco seasoning
  • 29oz can black beans, drained, reserving 1/2 cup liquid
  • 29oz can yellow hominy
  • 1/2 cup salsa
  • 4 10’ tortillas
  • 2 cups Jack cheese
  • 1 can green enchilada sauce


Servings 8


Step 1

Preheat oven to 400 degrees.

In a large skillet, brown the ground beef. Add onion and cook until tender. Add taco seasoning and stir to coat the beef. Add the black beans to the beef and mash into a chunky paste. Stir in reserved liquid. Add hominy and salsa.

Coat a large, oven-safe skillet with cooking spray. Place a tortilla in the skillet and top with the beef mixture. Top the beef mixture with the cheese. Place another tortilla on top and repeat. The last tortilla will be on top. Sprinkle the last tortilla with cheese.

Bake in the skillet for 30 minutes. Serve with warm enchilada sauce.
