Pumpkin Cake

This recipe came from my dear friend, Lisa Crosby's, mother. It was always a Thanksgiving tradition for their family, and now she's shared the recipe with our family.

  • cups Sugar

  • 1

    cup Vegetable Oil

  • cups Self-Rising Flour

  • tsp Baking Soda

  • tsp Cinnamon

  • ¼

    tsp Salt

  • cups Pumpkin

  • tsp Vanilla

  • Frosting:

  • 1

    stick Margarine

  • 1

    box Confectioners' Sugar

  • 8

    oz. Cream Cheese


Mix eggs, sugar and oil with beater. In a separate bowl, mix pumpkin with vanilla. Put all ingredients together and mix well. Bake in greased and floured tube pan at 350 degrees for 50 to 55 minutes. When completely cool, top with frosting, made as follows: Mix well 1 Stick Margarine, 1 Box Conf. Sugar and 8 oz. Cream Cheese.
