Ingredients

  • 8 cups finely chopped zucchini
  • 2 cups finely chopped onions
  • ½ cup chopped green pepper
  • 1 cup chopped sweet red pepper
  • ¼ cup pickling salt
  • 2 ½ cups white sugar
  • 1 ½ cups white vinegar
  • 1 ½ tsp dry mustard
  • 1 tsp celery seed
  • ½ tsp black pepper
  • ½ tsp tumeric
  • 2 tsp corn starch
  • 1 Tbsp cold water

Combine zucchini, onions and peppers. Sprinkle with salt. Let stand 2 hours and stir periodically. Drain through a colander and rinse and press out juice. Rinse with water, drain and press our juice again. In saucepan, combine sugar, vinegar, mustard, celery seed, pepper, tumeric. Bring to a boil. Add this to drained vegetables and simmer uncovered for 25 minutes. Mix cornstarch and water and add to vegetables, sugar and spice mixture and cook another 5 minutes. Bottle.
