Chocolate Chip Cookies - soy and dairy free

Ingredients

  • 2

    sticks organic salted butter (1 cup) at room temperature

  • 1⅓

    c. organic sugar

  • 1

    c. organic light brown sugar

  • 2

    large organic eggs

  • 1

    Tbsp. vanilla extract

  • ¼

    c. organic amber maple syrup

  • 1

    tsp. baking soda

  • 1

    tsp. salt

  • c. organic unbleached all purpose flour

  • 1

    - 10 oz package of organic semi-sweet chocolate chips, soy, nut and dairy free such as Enjoy Life Mini Chips

  • parchment paper

Directions

1. Gather all ingredients. 
2. Pre heat oven to 330°.
3. Beat butter in bowl with electric mixer on medium for 2 minutes. Butter will be light, fluffy and pale yellow. 4. Add sugar and brown sugar.  Beat for 1 minute at medium speed. 5. Add eggs, vanilla and maple syrup.  Mix on medium for 1 minute.  Scrap sides of the bowl once.  6. Add baking soda and salt.  Mix for 30 seconds on low. 7. Add flour one cup at a time.  Mix on low until blended. 8.  Add chocolate chips and mix with a spoon. 9. Spray cookie sheet with grape seed oil. 10. Place large tablespoon full of cookie dough on the cookie sheet (12 cookies per sheet). 11.  Bake for 14 minutes with a convection oven, 17 minute witha regular oven. 12.  After removing cookies from the oven, keep the cookies on the cookie sheet for one minute to cool.  (If you leave the cookies on the cookie sheet too long they will continue to bake and get hard.)  Remove cookies from cookie sheet to finish cooling.
