- 1/2 cup butter or margarine
- 1/2 cup brown sugar
- 1/2 tsp. vanilla
- 1 1/2 cups flour, unsifted
- 1 cup well-drained pineapple
- 1/4 cup melted butter
- 3/4 cup white sugar
- 1 egg
- 1 cup coconut
Cream butter or margarine. Blend in brown sugar and vanilla. Mix flour in thoroughly.
Press firmly into ungreased 9" pan. Bake 15 minutes at 375 deg.
Spread with topping as follows:
Beat together pineapple, melted butter, sugar, egg and coconut.
Spread over bottom and bake 30-35 minutes longer.
