Chocolate Mousse

Ingredients

  • 4 large eggs- separated
  • 1/2 c. sugar
  • 1/4 c. (1/2 stick) butter, cut into 1/2 pieces
  • 1/4 c. water
  • 8 oz. bittersweet or semisweet chocolate

Preparation

Step 1

1. whisk egg yolks, 1/4 cup sugar, butter and 1/4 c. water in a large metal bowl to blend
2. set bowl over saucepan of simmering water, whisk constantly until thermometer reads 160 @ 3 minutes
3. add chocolate and whisk until melted - turn off heat and leave it
4. beat egg whites until soft peaks form - add 1/4 c. sugar beat until stiff but not dry
5. fold in 3 additions into chocolate
6. put in 6 small dessert glasses and chill at least 3 hours
