Ingredients
- 3 1/2 cups peeled, diced potatoes
- 1/3 cup diced celery
- 1/3 cup diced onion
- 1/3 cup diced carrots
- 3/4 cup cooked, diced ham
- 3 1/4 cup water (or substitute a can of chicken broth for some of the water)
- salt and pepper to taste
- 5 Tbsp. butter
- 5 Tbsp. flour
- 2 cups milk
Preparation
Step 1
Combine potatoes, celery, onions, carrots, ham, water & broth in a large pot. Bring to a boil then cook over med heat until potatoes are tender (10-15 min). Stir in salt and pepper.
In a separate sauce pan, melt butter over med-low heat. Whisk in flour w/a fork and cook, stirring constantly until thick (about 1 min) Slowly stir in milk.
Continue stirring over med-low heat until thick (4-5 min)
Stir the milk mix into the pot and cook soup until heated through.
