Citrus-scented Snap Pea & Carrot Couscous

Ingredients
- 2 tsp olive oil
- 1 carrot, peeled and thinly sliced
- 1 cup fresh sugar snap peas
- 3 tbls sliced almonds
- 1 cup orange juice
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 cup couscous
- 1/4 cup raisins
- 1/4 cup chopped basil
- 1/2 tsp lemon zest

Preparation
Step 1
1. Heat oil in a medium saucepan over medium high heat, then add the carrot and cook 1 minute. Add the snap peas and almonds; cook until crisp tender, about 1 minute. Transfer to a bowl and keep warm.
2. Return the saucepan to the heat and add the orange juice, salt, pepper and bring to a boil. Add the couscous and remove from the heat. Cover and let stand 5 minutes. Fluff with a fork, then stir in the vegetables, raisins, basil and lemon zest.
