Chipotle Rubbed Tri Tip
- When ready to serve, you will need:
- 1 tsp chipotle chile powder
- 1/2 tsp ground cumin
- 1/4 tsp freshly ground black pepper
- 1 tsp fine sea salt
- 1 tsp garlic powder
- 2 lb tri tip roast, in its original wrapper
- 1 Tbs grapeseed oil or olive oil
- Easy Homemade Salsa
Combine all the spices in the snack size bag. Place the tri tip roast and the bag of spices in the freezer bag.
Store the roast and spice packet in the freezer until a day or two before serving.
To thaw and serve:
Thaw the roast completely on a tray in the refrigerator. Rub the tri-tip with the oil. Rub the seasoning mix into the meat, coating it thoroughly. Cook the roast on a hot grill, turning once, for 40min, or until it reaches the desired doneness; the internal temp should be 135 for medium rare or 160 for well doneness. Allow the roast to rest, tented with foil, for 10min. Slice the meat against the grain and serve with salsa.
