Baked Beef Taquitos

Ingredients

  • When ready to serve, you will need:
  • Vegetable oil for frying the tortillas
  • 24 corn tortillas
  • 3 cups Versatile Shredded Beef
  • 4oz can diced green chiles
  • 2 scallions, finely chopped
  • Salt and freshly ground black pepper
  • Easy Homemade Salsa
  • Super Simple Guacamole
  • Sour Cream

Preparation

Step 1

Fill a skillet with vegetable oil to a depth of 1in. Heat over medium heat until oil shimmers. Fry the tortillas in the hot oil for 30-45 seconds each, turning once with tongs. Drain the tortillas on paper towels. Allow the tortillas to cool enough to be easily handled.
In a large bowl, combine the shredded beef, green chilies, and scallions. Season the mixture to taste with salt and pepper.
To assemble the taquitos, roll about 2 Tbs of filling tightly into each tortilla. Secure the taquitos with toothpicks and set them on a baking sheet.

Freezing instructions:

Place the baking sheet in the freezer for about 20min, or until the taquitos are partially frozen but not so firm that you can't remove the toothpicks. If the toothpicks get frozen stuck, that's fine; you can store them with the toothpicks thought you may not be able to pack them as compactly. Once frozen, pack the taquitos into freezer bags or containers and store them in the freezer.

To serve:
Preheat the oven to 475. Place the frozen taquitos, seam side down, on a baking sheet and bake for 15-25min, turning once. Check for crispness after 15min. Serve with salsa, guacamole and sour cream.
