Green Beans with Bacon Vinaigrette

Ingredients

  • salt and pepper
  • 2 pounds green beans, trimed
  • 6 slices of bacon
  • 2 shallots, sliced
  • 2 T cider vinegar
  • 2 T whole grain mustard
  • 2 T. olive oil

Preparation

Step 1

Bring large pot of water to boil, and add 1 T salt. Add green beans and cook until just tender.

Cook bacon in microwave.

Cook shallots in olive oil for 1 minute, stir in mustard, vinegar, 3/4 tsp salt, 1/4 tsp pepper.

Add to green beans along with the bacon and toss to combine.
