Warm Mexican Crab Dip

Ingredients

  • 1 tbsp OO
  • 1/2 c finely chopped onion
  • 1 garlic clove
  • 2 tbsp seeded and chopped jalapeno pepper
  • 1/2 c light beer
  • 2 c heavy whipping cream
  • 1 (8oz) cream cheese
  • 1 (8oz) block pasteurized prepared cheese product
  • 1 pd crabmeat
  • 1/4 c fresh lime juice (2 limes)
  • 1/4 c minced green onion
  • 1/4 c minced fresh cilantro leaves
  • 1 tsp chili powder
  • 1 tsp salt
  • Pinch black pepper
  • 1/4 tsp cayenne
  • 1/4 tsp cumin
  • Tortilla chips

Step 1

In 4 qt saucepan, heat OO over medium heat. Add the onion, jalapeno pepper, and garlic. Cook stiring frequently for 3 minutes.

Stir in beer and cook until the liquid is reduced by half. Stir in the cream, cream cheese, and processed cheese, whisking until melted and smooth.

Stir in crabmeat, lime juice, green onion, cilantro and chili powder and simmer for 15 minutes. Add the salt, pepper, cayenne and cumin. Transfer the dip to a serving bowl.
