Ingredients

  • 2 packages of chicken parts (drumstick, thigh, leg, breast, etc)
  • 1 quart buttermilk
  • 2 cups all purpose flour
  • 1 Tbs kosher salt
  • 1 Tbs ground black pepper
  • 1 tsp cayenne pepper or Cajun seasoning mix
  • Vegetable Oil

Preparation

Step 1

Place chicken in large bowl or tupperware container, cover with buttermilk and refrigerate overnight.

Preheat Oven to 350 degrees.

Combine flour, salt, pepper and cayenne/Cajun in large bowl. Take chicken out of buttermilk and coat each piece thoroughly with flour mixture.

Pour bout an inch of oil in large pot, and heat to 360 degrees. (Temperature of oil is VERY important, if it's not hot enough the oil will saturate the chicken, and too hot it'll burn the chicken).

Working in batches carefully place 3-4 pieces in the hot oil and fry in both sides bout 3 minutes until golden brown. Remove from oil and set on baking sheet. Do this until all the chicken has been fried. When all the chicken has been fried, put in over and bake chicken 30-40 minutes until no longer pink inside.

*you may need to add vegetable oil to the pot a few times throughout the process.
