Ingredients

  • 3 tablespoon extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon minced garlic
  • 1 pint cherry or grape tomatoes, cut in half
  • 1/2 pound part skim mozzarella cheese cut into 1/2" cubes
  • 16 large fresh basil leaves, washed and dried
  • Salt and pepper to taste

Preparation:
Tear basil leaves into smaller pieces. Mix together tomatoes, cheese and basil leaves. In a small bowl, whisk together oil, vinegar, garlic, salt pepper to taste.

To Complete:
Just before serving, drizzle salad with prepared vinaigrette.

ALTERNATE SERVING SUGGESTION

Instead of using cherry or grape tomatoes, use 2 large vine-ripened tomatoes, cut crosswise into 1/4-inch-thick slices.

Instead of cutting mozzarella into 1/2" cubes, cut cheese 1/4-inch-thick slices.

On a platter arrange tomato slices alternately with mozzarella and basil leaves.

Just before serving, drizzle salad with prepared vinaigrette.
