Ingredients

  • Dressing:
  • 1 head of iceberg lettuce
  • 1 head of leaf lettuce
  • 1/2 red onioin
  • 12 pitted black kalamata olives
  • 1 english cucumber
  • 2 oz feta cheese
  • 12 cherry tomatoes
  • 1 lemon
  • 4 tsp olive oil
  • 1 tsp minced garlic
  • pinch of salt/pepper
  • pinch of oregano

Preparation

Step 1

Wash/chop both heads of lettuce

Add:
chopped olives
chopped onion
chopped cucumber
squares or crumbles of feta
halved cherry tomatoes

Dressing;
grated lemon zest in mason jar
juice from 1/2 lemon
equal parts of olive oil (3-4 tsps)
garlic
salt/pepper/oregano
shake in jar with lid on

Add oil or lemon or salt to taste and pour over salad and toss and serve.
