  • 2 cups sultana raisins

  • ¼ cup seeded raisins

  • ½ cup candied citron peel

  • ¾ cup butter

  • ¾ cup sugar

  • 4 eggs, well beaten

  • 2 cups flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ tsp almond extract


Wash aand pick over raisins, dry throughly, slice citron citon peel. Cream butter, gradually add sugar and cream together until light and fluffy. Beat eggs until light and beat into mixture. Sift, then then measure flour. Add baking powder and salt, sift again. Mix a little of the flour with the fruit. Stir flour and fruit into sugar-egg mixture. Add almond extract. If necessary a little orange juice may be added to moisten the batter. Mix throughly. Bake at 300F for about 45-60 minutes, until set and golden brown.
