Ingredients

  • 2 3/4 cups sifted flour
  • 1/2 tsp. baking powder
  • 1 cup butter
  • 1 3 oz. package cream cheese
  • 1 cup sugar
  • 1 egg
  • 1/2 cup almonds, ground
  • 1 Tbs. grated lemon rind
  • 1 jar raspberry preserves
  • confectioner's sugar

Step 1

Sift flour and baking powder together. In another bowl, cream butter, cream cheese, sugar and egg and beat until fluffy. Add flour mixture, blending thoroughly. Stir in ground almonds and lemon rind. Turn mixture onto wax paper and shape into ball. Chill several hours. Cut dough in half and roll out to a 1/8 inch thickness on a lightly floured surface. Cut into 3 inch round circles. Place on ungreased cookie sheet. Repeat with other half of dough, then cut a 1/2 inch circle out of center of these circles. Cut the same amount of both types of circles. Bake at 350 for 8 minutes. Let stand 1 minute then remove to wire rack and cool completely. Heat raspberry preserves and spread each solid circle with preserves, top with a cut out and place on rack. Sprinkle with confectioners sugar.
