Southwestern Pasta Nuggets

Ingredients

  • 1/2 package (8 oz.) Pasta Nuggests, uncooked
  • 1 pound lean ground beef
  • Salt & pepper, to taste
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery, optional
  • 1 (12 oz.) can whole kernel corn, drained or frozen corn, thawed
  • 1/2 cup mild or medium taco sauce
  • 1 (8 oz.) can tomato sauce
  • 1/2 (4 oz.) can chopped green chilies, drained
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 cup (4 oz.) shredded Cheddar cheese
  • 1 cup (4 oz.) shredded Monterey Jack cheese

Preparation

Step 1

Cook pasta according to package directions. Preheat oven to 350°. In a large skillet, over medium heat, brown beef, onions and celery until cooked through and tender; season with salt and pepper; pour off excess fat. Stir in remaining ingredients except cheesed until thoroughly combined. Add cooked pasta and toss together. Spoon half of noodle mixture into a greased 2-quart casserole. Sprinkle noodles with half of cheese mixture. Spoon remaining noodle mixture into casserole dish and top with remaining cheese. Cover; bake 30 minutes or until heated through. Garnish as desired.
